Moonira’s recipe for banana bread

This bank holiday, why not try your hand at MasterChef’s Moonira Hinglotwala’s delicious banana bread?

Ingredients

  • 9oz self-raising flour
  • 6oz soft light brown sugar
  • 3oz softened butter
  • 2 eggs – lightly beaten
  • 2 large or 4 small ripe bananas – mashed (about 12oz unpeeled weight)
  • 1/2 tsp cinnamon
  • 1/4 tsp grated nutmeg
  • 2oz chopped walnuts

Method:

Pre-heat oven to 180 degrees/ 160 degrees fan oven/ Gas mark 4.

In a bowl, cream together the sugar and butter until light and fluffy.

Add the eggs, one at a time, beating well after each time.

Beat in the mashed bananas, stirring well to combine.

Fold in dry ingredients then stir in the walnuts.

Pour into a greased and lined 2lb loaf tin.

Bake for one hour or until a skewer inserted into the middle comes out clean.

Remove from the oven and allow to cool for about 20 minutes in the tin before turning out onto a wire rack.

Cool completely before slicing.
